PIMMS Cake with Apple and Elderflower
Such a fancy cake for any occasion. Pimms, apple and elderflower, a perfect blend for a morning tea party.
- 200g organic salted butter (softened)
- 200g caster sugar
- 200g self raising flour
- 3 large eggs
- 2 grated apples
- without the skin
- 100ml original Pimms
- Buttercream filling
- 100g cucumber - pureed
- 100g mango- pureed
- 100g soft butter
- 50mls - Eldeflower Cordial or until right consistency
- 300g icing sugar
- 150g icing sugar
- Lime juice & Elderflower Cordial until you get the right consistency

Cream the softened butter and sugar together until pale and fluffy, then gradually add the eggs Add the flour, grated apple and Pimms, mixing all together until they are fully combined.
Divide into 2 cake tins which have been greased and floured and bake in pre-heated oven for approx. 30 mins.
To make the filling
Cream together the icing sugar and butter to make a basic, firm buttercream. Then make a puree from the mango and cucumber and mix it in to the buttercream. Then add the cordial until you reach the desired consistancy.
For the Icing
Mix the lime juice with the icing sugar until you get the right consistency, quite thick.
Spread a very generous layer of the butter cream on the bottom layer of the cake and sandwich together with the top half. Spread the icing over the top of the cake and then layer with traditional PIMMS fruit, I used orange, apple, cucumber and strawberries and garnished with a spring of mint.
Vary the fruit according to taste - try using apple and blackberry with the limited edition PIMMS - elderflower and blackberry
