Ingredients

  • 1 large onion
  • 150g mushrooms
  • 200ml double cream
  • 1 tblsp worcester sauce (depends on taste)
  • 1 tsp French (or mild English) mustard
  • 1-2 tblsp lemon juice (depends on taste)
  • 1/2 oz butter
  • 1-2 cloves garlic

Preparation

Step 1

Finely dice onion and mushrooms.

Step 2

In a frying pan, slowly soften onions and mushrooms in the butter.

Step 3

When onions and mushrooms are softened, add garlic, worcester sauce, mustard and 1 tablespoon of the lemon juice. Quickly mix contents of pan together.

Step 4

Add the cream and thoroughly mix to combine ingredients. Now taste - do you need the other tablespoon of lemon juice to cut through the cream? Is there enough mustard or worcester sauce? You must tweak the ingredients to suit your own palate.

Step 5

Once you are happy with the taste, serve immediately over your choice of meat.
