Fried broccoli, ricotta & Saint Marcellin patties

- For about fifteen patties:
- 2 eggs
- 50g chickpea flour
- 240g ricotta
- 300g cooked broccoli florets
- 80g Saint Marcellin, very ripe

Step 1
Heat a little oil in a pan. Fry the cooked broccolion medium to high heat until lightly coloured. Salt and pepper. Cool, cut into small pieces.
Step 2
Cut the saint Marcellin into small cubes.
Step 3
In a bowl, beat with an electric whisk, the eggs, flour and ricotta until smooth.
Add the broccoli and Saint Marcellin. Mix with a spoon. Cover tightly and store in the container in the fridge for ½ hour.
Step 4
Heat a pan with a little olive oil. Take a tablespoon of mix and place in the hot pan. Flatten and give it a round shape. Cook about 5 minutes per side over medium heat until golden.
