Preparation
Step 1
Prepare (or thaw) the squid.
Step 2
Cut the onion in two, then into thin rings .Crush the garlic.
Step 3
In a casserole dish, heat the oil, fry the squid, cut into rings, for 2 minutes, stirring occasionally.
Step 4
Remove the squid from the pot and over low heat, sweat the onion. Add the garlic at the end.
Step 5
Add the cognac.
Step 6
Add salt and pepper and add the white wine.
Step 7
Continue cooking over low heat for 30 to 40 minutes, leaving the lid. 5 minutes before the end of cooking, remove the lid so that the sauce can thicken.
Step 8
Serve with rice.
