Ingredients
- 3 litres of mussels
- 100ml dry white wine
- 1 small bunch of parsley
- 2 garlic cloves
- 50ml of olive oil
- 200ml good tomato juice
- 1 shallot
- 25g vermicelli
- 2 grams of saffron
- Pepper

Preparation
Step 1
Wash and cook the mussels in a marinière white wine sauce until they open, without overcooking. Keep the cooking juices. Shell the mussels and set aside.
Step 2
In a saucepan, sweat the shallots with olive oil, chopped parsley and chopped garlic. Add the tomato puree and Safran. Simmer. Add the juice of the mussels and add water to complete in volume. Simmer for 20 minutes. Cook the noodles for 5 minutes. Add the mussels.
