Preparation
Step 1
Peel and seed the tomatoes. Cut the flesh into chunks.
Step 2
Peel and chop the shallot. Then brown in a pan with olive oil and add the diced tomatoes.
Step 3
Cook over medium heat for 15 minutes so the tomatoes render all their water. Add the concentrated tomato paste, stir and remove from heat. Reserve.
Step 4
Preheat the oven to 200 ° C. Meanwhile, add the flour, Parmesan, and salt in a bowl.
Step 5
Add the butter and water and then "crumble" using your fingertips. Pour the tomato mixture into a small baking dish (or 2 individual dishes), spread over the goats cheese and cover with the crumble.
Step 6
Bake for twenty minutes.
Serve hot!
