Roast beef marinated in coffee and orange

  • 500 gr beef for stewing
  • 1 onion
  • 2 cloves of garlic
  • 30 cl of strong coffee
  • 6 mandarins or oranges
  • 3 cloves
  • 10cl Rum
  • salt
  • pepper

Step 1

Marinate the meat, cut into cubes in the coffee, rum, the juice of 4 tangerines, cloves and crushed garlic, season to taste with cayenne pepper, salt and pepper. Marinate for 24 hours.

In a casserole cook the onion in 3 tablespoons of oil. Drain the meat and keep the marinade. Cook the meat until golden brown and pour in the marinade and add 2 cups of water and cook, covered, for 45 mn.

Step 2

Peel the mandarins and cut out the segments.

Place the meat in a dish, decorate with the segments of mandarins and serve with white rice or a sweet potato gratin.
