Lemon Victoria Sponge Cake

- Softened Butter at room temperature - 180 g
- Caster Sugar - 180 g
- Eggs - 3
- Plain Flour - 165 g
- Baking Powder - 15 g
- Vanilla Extract - 1 teaspoon
- Zest of 1 lemon
- Lemon Juice - 2 teaspoon
- For the filling and icing:
- Home made Lemon Curd - 1/2 cup
- Softened Butter - 125 g
- Icing Sugar - 250 g
- Milk to correct consistency of butter cream (optional)
- Lemon Juice - 2 teaspoon

Nutty flavoured chicken curry
- Chicken - 1 medium (cut into pieces)
- For marinating:
- Chilli Powder - 1/2 tablespoon
- Salt - 3/4 teaspoon
- Yoghurt/Curd - 120 ml
- For making paste 1:
- Almonds - 50 g
- Cardamom - 2
- Cloves - 2
- Cinnamon - 1/2 inch stick
- Water - 1/2 cup
- For making paste 2:
- Sliced Onion - 2 medium
- Tomato - 1 (chopped)
- Ginger Garlic Paste - 2 teaspoon
- Oil - 4 tablespoon
- Salt to taste
- Turmeric Powder - 1/2 teaspoon
- Chopped Mint - 2 tablespoon
- Water to make up the gravy
Chicken Pot Pie

Parboil the peas and carrots in the microwave for 5 minutes
- For the Filling:
- Cooked and Chopped Chicken Pieces - 1 cup Chopped Onion - 1/2
- Frozen Peas - 40 g
- Carrot - 1 (diced)
- Garlic - 1 clove (minced)
- Butter - 1 tablespoon
- Plain Flour - 1 tablespoon
- Milk - 360 ml
- Grated Cheese - 60 g
- Green Chilly - 1 (finely chopped)
- Fresh Chopped Parsley - 1 tablespoon
- Salt and Pepper to taste
- For assembling the pie:
- Puff pastry - 125 g

- Coriander Powder - 1 teaspoon
- Roasted Cumin Powder - 1/2 teaspoon
- Garam Masala Powder - 1 teaspoon

- Cashewnuts - 12 (soaked in hot water and ground into a paste)
