Cut off the top of the squash just below the stalk

  • 1kg butternut squash (quite ripe so the flesh is not too hard)
  • 300g minced beef
  • 60g rice (I used Thai rice)

  • grated cheese (2 handfuls)
  • 1 beef stock cube dissolved in 100 ml hot water
  • 2 teaspoons ground coriander
  • oil
  • salt and pepper

  • 1 green/red sliced peppers
  • 1 small onion sliced
  • 1 chicken breast
  • 4 flour tortillas
  • 4 tablespoons thick chunky salsa
  • 2 tsps (tablespoon) oil (best olive oil)
  • 1/2 teaspoon chicken seasoning
  • Black peper

This is a great soup with a kick and a sense of heart too

  • 1 courgette, sliced and diced
  • 1 pepper – mine was yellow
  • 2 red onions finely chopped
  • 2 garlic cloves finely chopped
  • Some dried chill flakes to taste or a chopped deseeded red chilli
  • Black pepper
  • 1 litre of chicken stock
  • Whatever ham you can muster – I used three slices chopped.
