Preparation

Step 1

Prepare the batter. Dissolve the yeast in beer, add a pinch of salt, add the flour and mix well. Leave aside for 1 hour.
Cut the maroilles cheese into slices 1 cm thick and then cut into 2.

(You can also use camembert or another similar cheese.)

Step 2

Coat the slices in flour then in egg yolk, and again in flour and place in the fridge for 15 mins.
Heat a deep fat fryer to 180 °. Dip the Maroilles cheese in the batter for about 3 minutes and fry.
