  • 4 rounds of goat cheese
  • 100 g spinach
  • 150 g of bread (without crusts)
  • 1/8 liter of milk
  • 1/8 liter of heavy cream
  • 1 whole egg
  • 1 egg yolk
  • salt, pepper, garlic

Preparation

Step 1

Blanch the spinach leaves and put them in cold water.
Cut cheeses into four and place them on the bread crumbs, in a bowl.
Cool the milk and cream, pour this mixture on the bread setting.

Step 2

Let it sit for 15 minutes, then add the eggs and 75g of spinach and mix all together.

Step 3

Fill small ramequins with the remaining spinach. Fill them up with the mixture (the caillette).

Step 4

Fill an oven tray with water, lay the ramequins in the water (don't let the water spill over), and cook for 20 minutes at 180°C.
