Prawns & broccolli with bacon and onion in a creamy sauce

Ingredients

  • 250g Prawns, 4 rashers Bacon (diced), 1/2 onion, 1/2 clove garlic, small broccolli (few florets), vegetable stock, double cream, pasta of your choice (penne I like), salt and pepper to season

Preparation

Step 1

Boil Broccolli for 10 minutes

Step 2

Add pasta to broccolli to boil

Step 3

Fry diced bacon, onions and garlic until browning

Step 4

Drain water off broccoli and pasta, add fried bacon and onion.

Step 5

Stir in 1 cup of sauce (1/2 double cream, 1/2 vegetable stock) Add prawns.

Step 6

Stir until sauce is thick and creamy, add salt & pepper & serve

For more texture, add the broccoli to the pasta at the same time as the bacon and sauce as it will be more crunchy. It's really easy to adjust the amounts to your taste or what you have available e.g adding less bacon & more prawns or vice versa. If someone in your family doesn't like prawns leaving them out altogether still creates a tasty pasta dish and as they're only added at the last minute it doesn't mean creating a seperate meal.
