Incredibly light vanilla sponge buns


A very light sponge that's easy to make.

  • 2 Eggs - seperated
  • 180g Sifted Self Raising Flour
  • 180g Butter
  • 180g Sifted Caster Sugar
  • 30g Ground Almonds
  • 1 teaspoon Vanilla Essence

Step 1

Beat the butter and the sugar in a bowl until light and fluffy.

Step 2

Add flour, almonds, vanilla essence and egg yolks.

Step 3

Beat the egg whites in a bowl until they have tripled in volume and appear 'foamy'. I reccommend using an electric whisk.

Step 4

Gently fold egg whites into cake mix until combined.

Step 5

Pour into bun cases and bake for 15 mins or until skewer comes out clean.
