Ingredients
- 2tbsp vegetable oil and more for deep frying
- 3 onions sliced
- 1 clove garlic crushed
- 1 red chilli finely sliced (optional)
- 200g/7oz cooked haggis
- 250g/9oz gram flour
- 300ml/10fl oz orange juice
- 100ml/3.5fl oz white wine vinegar
- 300g/10oz sugar
- 100ml/3.5fl oz whisky

Preparation
Step 1
Heat the oil and gently fry the onions until golden brown.
Step 2
Mix the onions, garlic, chilli and haggis until well combined.
Step 3
In another bowl, whisk the gram flour with 125ml/4fl oz warm water until the consistency of double cream.
Step 4
Stir the onion mixture into the batter and mix well. Use 2 teaspoons to form quennelles.
Step 5
Heat oil for deep frying to 180C/350F. Gently add the quennelles and cook for 2-3mins until cooked through. Remove and drain on kitchen paper. Keep warm.
Step 6
For dip, bring remaining ingredients to the boil and cook till thickened.
