Cookie Stack Cake (competition)
For those who aren't such cake-lovers, this cookie stack is a tasty alternative!
Ingredients
- 100g soft brown sugar
- 100g caster sugar225g plain flour
- 100g butter
- 1 egg
- 1tsp vanilla extract
- 225g plain flour
- 140g milk chocolate
- 85g white chocolate
- 85g plain chocolate
- 150g butter
- 350g icing sugar
- 1tsp vanilla extract
- 2tbsp milk
- 50g cocoa powder
- various types of chocolate to melt and drizzle as decoration

Preparation
Step 1
Preheat oven to 200°C.
Line 2 baking sheets with baking parchment.
Chop the white and plain chocolate into chunks.
Melt the milk chocolate in a microwave.
Step 2
Mix the butter and sugars in a large bowl with a wooden spoon.
Add the egg, vanilla, flour and half the milk chocolate.
Mix well, then stir through the white and plain chocolate chunks.
Step 3
Use an ice cream scoop to drop 24 even balls of dough onto the baking sheets.
Step 4
Bake in batches for 8-9 minutes until pale golden and soft to the touch.
Cool on a wire rack, then drizzle with the remaining milk chocolate.
Step 5
FOR THE BUTTERCREAM:
Cream the butter until soft, then beat in the icing sugar a little at a time.
Beat in the cocoa powder, vanilla extract and milk.
Step 6
Lay 7 cookies onto a flat plate (6 cookies surrounding a seventh) and spread buttercream in a circle around the outer cookies.
Step 7
On the second tier, spread 5 cookies in a circle, using the buttercream as 'glue'. Do not place a cookie in the centre.
Step 8
Spread another circle of buttercream and a blob of buttercream in the centre then repeat steps 6 and 7 to create a four-layer cookie stack!
Step 9
Drizzle chocolate all over the stack and decorate with a candle.
It's easiest to serve by eating one cookie at a time :)
