Macaroni and Cauliflower Cheese

- Half a cauliflower, cut into small florets, and slice the stem
- 200g Cheddar cheese, grated
- 100g Parmesan cheese, grated
- bunch of flat leaf parsley, finely chopped
- salt
- 400g dried macaroni
- 200g creme fraiche

Preparation
Step 1
Add the macaroni and cauliflower to a large pan of boiling salted water. Cook the macaroni according to the instructions on the packet.
Step 2
Put both cheeses into a bowl over the saucepan and add the creme fraiche. Stir gently until cheese is smooth and melted.
Step 3
Add the parsley to the melted cheese and season. Remove the bowl of cheese and put to one side.
Step 4
Drain the macaroni and cauliflower, reserving the cooking water.
Step 5
Return the pasta and cauliflower to the pan, pour in the melted cheese and stir. If it's too thick, add a splash of the cooking water.
Serve now - or finish it under the grill to make it crispy on top. To do this, preheat grill to a medium-high heat. Add 150ml of the cooking water and stir well. Transfer to a baking dish and put under the grill until golden and bubbling.
