A tasty kiwi flavoured sorbet
- 150g sugar
- 300ml water
- 6 kiwi
- 1/2 lemon
- Egg white

Put the sugar and water in a saucepan and heat gently whilst stirring until the sugar is dissolved.
Bring to the boil for 5 minutes and once you have a syrup remove from the heat and leave to cool
Zest your lemon and squeeze it into a pan with the insides of your kiwi fruit (the skin would taste bad) liquidize this and then combine with the syrup
Pour onto a baking tray and place into the freezer, forking heavily and stirring every 30 minutes, after 2 hours beat in the whisked egg white for the final forking and freezing process
Ensure you serve softened, not rock hard
