Ingredients

  • 2 tablespoons milk
  • 1 1/4 cup granulated sugar
  • 1 1/4 cup self raising flour
  • 2 large eggs
  • 200g I can't believe its not butter
  • concentrated lemon juice
  • icing sugar
  • Glace cherries
  • strawberry sticks with fizzy coating
  • lemon curd
  • Love heart candies

Preparation

Step 1

Combine 2 tablespoons of milk with the eggs and whisk in your butter, flour and sugar

Step 2

Once mixed add into a buttered mould and place into a pre heated oven at 180 for 30 minutes until cooked and soft and spongy.

Step 3

Once cooked immediately drizzle with concentrated lemon juice, sprinkle with icing sugar and leave to cool on a baking tray

Step 4

Once cooled cut 1" thick and 3" x 3" squares from the cakes.

Take one piece and spread thickly with lemon curd, cut a small piece of strawberry cane and place inside a glace cherry and place this in the center, place another piece of cake on the top to finish the shape

Step 5

Cover in fondant or modelling chocolate to seal the cube shape, a pre rolled sheet will be easier to form around the cube and maintain the cube shape than spreading chocolate or icing over the top.

Step 6

Add the decorative pieces of fondant in a different colour, or spread melted chocolate in the positions on the corners to infuse the cube shape

Step 7

Using an icing pen draw on the decorative detail and place a blob in the center of each side, attach a love heart to each side in this position to finish the cube
