Lamb steaks in the Roman fried zucchini with thyme

Step 1
Prepare the fried courgettes: Heat a drizzle of olive oil in a pan, add the sliced courgettes, salt and cook 10 minutes. They must be coloured and remain slightly firm. When cooked, sprinkle with fresh thyme.
Step 2
In a mortar, mash the anchovies with the vinegar to a paste.
Step 3
Finely chop the garlic, rosemary and sage.
Step 4
Heat a drizzle of olive oil in a frying pan, sear the lamb steaks 1-2 minutes per side, cover them with garlic, rosemary and sage and pour the white wine. When cooked, cover the lamb steaks with anchovy paste. Salt and pepper.
Step 5
Serve the lamb steaks with the fried courgettes and thyme.
