Step 1
Make the custard: Combine the egg yolks with sugar and add the cold milk. Heat over high heat, whisking constantly. When the cream thickens, pour your custard through a strainer. Add a few drops of food coloring and rose oil. Cool the custard.
Step 2
For the mounted eggs whites: Beat the egg whites and gradually add the sugar until stiff. Make the egg white islands using a piping bag. Cook in the microwave or steam (73 ° C) either conventionally or by poaching.
Step 3
Presentation:
Place a little custard in your bowls. Add the "islands". Sprinkle with pink pralines and serve immediately.
