Fig gratin with cinnamon and orange blossom

- 6 fresh figs
- 4 egg yolks
- 20 cl of single cream
- 4 tsp cinnamon sugar (or 4 tsp sugar + 1 tsp cinnamon powder)
- 4 tsp of orange blossom water

Preheat the oven to 180° (gas mark 4) and butter 4 ramekins.
Wash the figs and cut in half. Place them in the ramekins rounded side down.
In a bowl, whisk the egg yolks with cream and sugar. Add the orange blossom water.
Pour the cream over the figs and bake 15 minutes in the hot oven.
Remove and leave to cool.
They can be served warm or cold.
