Sweet and Savoury Asparagus Fritters
- 1 bunch white asparagus
- 1 bunch green asparagus
- 500g of sugar
- Deep fat fryer

Cut the white asparagus lengthwise in thin slices
Boil ½ liter of water and 500g of sugar
Pour boiling syrup over the slices, then leave to cool in the liquid.
Arrange on a plate and let dry in oven at 90°C for about an hour.
Cut the green asparagus lengthwise in thin slices
Fry in the deep fat fryer at 130°C
Dry on paper towels and season whilst still hot
