Step 1
Fry in a pan the onion and the lardons, without adding any extra fat. Beat the eggs like an omelette and add them to the preparation. Once the eggs are cooked (but before they stick!) add the lettuce cut into thin slices, and the milk.
Step 2
Add salt and pepper to taste, and add a little water if necessary (depending on the size of lettuce used). Serve very hot with croutons rubbed with garlic.
