Step 1
Marinate the meat for 24 hours with red wine, the myrtle wine, a carrot, 1/2 onion, diced and a bouquet garni. Add all the ingredients.
Step 2
Pour everything through a sieve, decant the meat and cook it in oil. Add the aromatic garnish and flour. Sweat and add the tomato concentrate and simmer, adding a little water. Add salt and pepper and cook slowly. Cook, covered for 2 hours, monitoring the cooking.
