Earl Grey Macarons with Cream Cheese Frosting

- For the Earl Grey macaron shells (A):
- 53g egg white
- 25g granulated/ caster sugar
- 100g icing/superfine sugar
- 60g ground almonds
- 1 earl grey tea bag
- For the cream cheese filling (B):
- 100g full fat cream cheese
- 30g butter
- 150g icing sugar
Fresh Pasta

- A weighing scale
- A pasta machine, or a rolling pin
- LOTS of extra flour for flouring everything liberally
Steamed Sea Bream

Fresh fish has such a delicate sweetness and is completely un-fishy
- Fresh whole sea bream (sea bass is a really popular choice as well!), approximately 300-400g
- 2 tbs light soy sauce
- 2 cloves of garlic, sliced
- about 3-4 cherry tomatoes, or 1 regular tomato, sliced into wedges
- good splash of shaoxing wine
- 1/2 tbs vinegar
- pinch of pepper
- 1 bay leaf
- 2 slices of ginger, thinly shredded
Olive and Sundried Tomato Focaccia

A really good Italian bread, with golden crust and a chewy crumb
- Makes 1 Focaccia, in a 34x24cm tray
- 280g strong bread flour
- 5g instant dried yeast
- 5g salt
- 1 Tbs dried basil
- 2 tbs olive oil
- 150 ml water
- To top:
- About 12 black olives, sliced
- 3 sundried tomatoes (rehydrated), chopped.
- More basil, for sprinkling
- More olive oil, to drizzle
- Salt

Chicken Mushroom Pasta

- 2 portions of chicken
- 2 portions of long pasta
- 7 small white mushrooms
- 1 big handful of kale
- 2 large lettuce leaves
- 1 clove garlic, minced
- 2 tbsp oyster sauce
- 1 tbsp flour
- 1 tsp dark soy sauce
- salt and white pepper
Slow Roasted Lamb Joint

Preheat the oven to 170deg C
- 1 rolled lamb breast joint – about 600g
- 2 large potatoes, skin on
- 2 large cabbage leaves
- 2 medium carrots
- 2 big pinches dried sage or rosemary
- 4 cloves garlic – smashed, skin on
- 1 bay leaf
- 1 pinch of sugar
- Good lug of olive oil
- sea salt and freshly ground black pepper – to season
Chocolate Banana Bread

Peel and mash bananas
- 3-4 medium, over ripe bananas (I used 4 because I had 4, but 3 goes perfectly well)
- 1/2 cup dark brown sugar
- 1/2 cup white caster sugar
- 1/2 cup oil
- 2 eggs
- 1 3/4 cup plain flour
- 1/2 cup unsweetened cocoa powder
- 1 tsp baking powder
- 1/4 cup plain yoghurt or milk
- 1 tsp vanilla extract or paste
