Pea and Bacon Soup

Heat the butter in a pot till the foaming subsides, and fry the chopped bacon till coloured
- 1 tsp butter, salted or unsalted doesn’t matter
- 1 onion, sliced
- 4 bacon rashers, chopped
- 1 garlic clove, minced (or garlic-pressed)
- 2 handfuls frozen peas, defrosted
- 300ml vegetable/chicken stock
- salt and pepper, to season
- (optional) 1 pinch ground mix spice
- (optional) olive oil, to serve
Curry Fusilli

An easy-to-do satisfying pasta meal that’s not too heavy on the sauces
- For curry powder (A):
- 1 tsp coriander powder
- 1 tsp smoked paprika
- 1 tsp turmeric powder
- 1 tsp double concentrated tomato puree
- 0.5 tsp lemongrass powder
- 0.5 tsp white pepper powder
- 0.5 tsp siriracha chilli sauce
- 0.25 tsp ground ginger
- 1 pinch mixed spice powder
- 1 pinch extra hot chilli powder
- Everything else:
- 2 portions of fusilli (or other short pasta)
- 1 carrot
- 2 inches cucumber
- 3 mushrooms
- 1 white onion
- 1 clove garlic
- 1 big handful of spinach leaves
- 1 handful of cashew nuts
- 1 small knob butter
- Sea salt, to season
Bacon, Cheddar and Corn Muffins

Super quick to make; these savoury muffins are loaded with smoky bacon, melty cheddar and sweet corn!
- (A)
- 225g plain flour
- 1/2 tsp salt
- 10g baking powder
- (B)
- 75g melted butter
- 225g milk
- 2 eggs
- (C)
- 115g (about 1 loose cup) chopped bacon
- 90g (about 1 loose cup) grated cheddar
- 50g sweet corn (frozen is fine, just defrost before use)
- 1 tsp dried thyme
Prawn and kale garlic cream sauce spaghetti

This garlicky cream sauce is done without cream and without butter!
- 1 tablespoon vegetable oil, sunflower or rapeseed is fine too
- 2-3 cloves garlic, minced. I usually go with one clove per person
- 1 big handful shell-on prawns
- 2 handfuls shredded kale
- 4 mushrooms, thickly sliced
- 2 cups cold milk
- 2 tablespoons flour
- 2 portions long pasta
- salt and pepper, to season
Vanilla & Strawberry Swiss Roll

This lovely light roll cake is a great way to enjoy those summer strawberries!
- For the cake:
- 4 egg whites
- 40g caster sugar
- 4 egg yolks
- 10g caster sugar
- 1/2 tsp vanilla paste or extract
- 30g plain flour + 10g corn flour OR 40g cake flour
- For the filling:
- 120ml double or whipping cream
- 20g caster sugar
- about 100g strawberries, sliced

- 125g canned butter beans
- 1 small carrot, grated
- 5 pitted black olives, chopped
- 1/2 tsp mixed dried herbs
- 1/2 tsp smoked paprika
- 1/2 tsp white pepper powder
- 1 tsp extra-hot chilli powder
- 1 tsp salt (or less if you don’t like salt)
- 1 pinch mixed spice
- 1 medium onion, finely diced
- 1 clove garlic, minced
- 1/4 cup panko or dried breadcrumbs
- Cornflour, to dust
- Vegetable oil, for frying
Soft Cheese Stuffed Portobello Mushrooms

- 4 Portobello Mushrooms, depending on size and appetite
- 45-50g of soft cheese, those flavored with garlic are perfect
- 1 generous pinch of fresh thyme
- 1 swig of olive oil
