Veggie lamb and apple curry

I love the meat alternative to lamb made by Quorn. This recipe is great for vegetarians.

Ingredients

  • 1 med size onion
  • 1/2 bell pepper (any colour)
  • 1 tbsp of salt
  • 1 tbsp of pepper
  • 3 tbsp of curry powder (I use jamaican curry)
  • 1 apple
  • Mixed frozen vegetables optional
  • 1 bag of Quorn lamb

Preparation

Step 1

Thaw the quorn lamb in a bowl. Season with salt,pepper and curry. Slice onions and peppers and mix all. Allow to sit for half hour.

Step 2

heat oil in a dutch pot or frying pan. Add lamb mixture. Fry for 2 mins. I call this burning the curry.

Step 3

next add about 2 cups of water. enough to cover the lamb mixture. Simmer for 5 mins.

Step 4

cut and dice apples. I cut the skin off but you can leave them on. Add to lamb.

Step 5

At this point you can add mixed veggies. Then cover pot and let simmer down until water thickens to a sauce.

Step 6

I serve mine over rice or make roti with it. Enjoy
