a sweet and crispy tart with a sweet almond filling
- For the short crust pastry:
- 200g plain flour
- 50g lard
- 50g margarine
- 1 pinch of salt
- 8 teaspoon of cold water to mix
- For the filling:
- 2 free range eggs
- 100g margarine (soften)
- 100g caster sugar
- 70g SR flour
- 25g ground almonds
- ½ teaspoon almond essence
- 2 tablespoon apricot jam
- 3 tablespoon flaked almonds

Pizza Tart

Pizza tart that is cheesy, spicy and yummy
- 2 tablespoons pizza sauce (I used this)
- 1 tablespoon dried herbs (oregano, basil and thyme)
- ¼ cup mozzarella cheese
- 1 tomato chopped in rings
- 1 small onion chopped in rings
- ½ cup colored bell peppers sliced
- ¼ teaspoon black pepper crushed
- ¼ teaspoon chilly flakes
- ¼ teaspoon salt
- 1 Puff Pastry Sheet (substitute with homemade or store bought pie crust)
- 2 cups rice
Christmas dairy free giant cupcake

- 4 egg's 8oz sugar 8oz butter (dairy free) 8oz s/r flour
- beat egg's and sugar together till nice and fluffy add butter and then flour and mix well divide mixture into a giant cupcake mould and bake for 1hr one the middle shelf gas mark 3 while it's cooling make the butter cream 8oz of dairy free butter to 16oz of icing sugar
- beat the sugar till nice and soft and add the icing sugar slowly the longer you mix the smoother the butter cream
- When all done crumb coat base and cover in green fondant then just have fun topping with all you favorite treat's :)

These are gorgeous Almond pies with the surprise of Mincemeat at the bottom for that Christmas treat
- Pastry:
- 250g Plain Flour
- 125g Unsalted Butter
- 1 Egg
- Almond Filling:
- 125g Unsalted Butter
- 125g Castor Sugar
- 1 Egg
- 125g Ground Rice
- 1/2 tsp Almond Extract
- Plus Mincemeat for bottom of each pie.
- Flaked Almonds to decorate.

- 2 tsp ground ginger
- 1 tsp ground mixed spice
