Melted snowman cookies

Cute little cookies to have on the Christmas table for all to nibble at.

Ingredients
- 250g butter, softened
- 140g castor sugar
- 1 egg yolk
- 2 tsp vanilla extract
- 300g plain flour
- pinch of cinnamon
- 20 small white marshmallows
- chocolate decorating pen
- sugar candy balls
- 175g royal icing

Preparation
Step 1
Mix the butter and castor sugar in a bowl with a hand mixer.
Add the egg yolk, vanilla extract and cinnamon.
Beat again to mix thoroughly.
Sift over the flour and combine well.
Knead together and roll out on a floured surface.
Cut into 20 cookie rounds.
Bake in the oven for 10-12 mins.
Remove from the oven and cool on a wire rack.
To decorate, make the royal icing to the packet instructions, you want it lose enough to drizzle.
Spoon a small amount onto the centre of the cookie and turn it so it runs away.
Add a marshmallow for the head, 3 little candy balls for the buttons and with the decorating pen, draw on stick arms and a face.
