Cream Tea Scones
These scones are crumbly. They are lovely to serve with afternoon tea with a few friends on Boxing

Ingredients
- 200g SR flour
- ½teasp. salt
- 50g butter
- 25g caster sugar
- 125ml milk
- ½ egg yolk (glaze)
- Icing sugar for dusting

Preparation
Step 1

Sieve flour in a large bowl.
Add in soften butter. Use a hand mixer to mix the flour and butter for I minute till it resembles fine breadcrumbs.
Step 2
Add in sugar and milk. Mix to a soft but not sticky dough.
Turn the dough onto a flour board. Roll out into 1 cm thick. Cut out 18 rounds with a fluted 4cm diameter cutter.
Step 3
Place the scones on a greased baking tin. Brush the tops with beaten egg yolk. Bake in a preheated oven (230C/450F/ Gas mark 8) for 7-10 minutes.
Cool on a wire rack.
Step 4
Serve fresh with butter, clotted cream and strawberry jam and a dust of icing sugar on top.
