Almond & Mincemeat Pies

These are gorgeous Almond pies with the surprise of Mincemeat at the bottom for that Christmas treat.

Ingredients
- Pastry:
- 250g Plain Flour
- 125g Unsalted Butter
- 1 Egg
- Almond Filling:
- 125g Unsalted Butter
- 125g Castor Sugar
- 1 Egg
- 125g Ground Rice
- 1/2 tsp Almond Extract
- Plus Mincemeat for bottom of each pie.
- Flaked Almonds to decorate.

Preparation
Step 1
To make the pastry weight the flour into a bowl & then add the cubed cold butter.
Rub together until fine bread crumbs.
Then add the egg and bring together.
Roll out into 12 discs and line a 12 deep tart tins tray.
Put a tsp of Mincemeat into the bottom of each lined tart.
To make the filling melt the butter in a pan, then add the sugar and cook for a minute.
leave to cool a little then stir in the egg, ground rice & Almond extract.
then pour this into each of the lined tarts until all 12 are done, you can then sprinkle some flaked almonds on top before putting in a pre heated oven 180d Fan, for 15 minutes.
