Scampi in crispy vegetables, radishes, turnips and rocket deglazed with sherry

Preparation

Step 1

Prepare the scampi:
Shell and baste their tummies in lemon puree and season with salt and pepper.

Step 2

Prepare the vegetable garnish:
Wash and scrape the radishes. Peel and wash the turnips. Cut both into slices, 2 mm thick. Remove the stalks from the rocket salad. In a bowl, combine the radishes and turnips with sherry vinegar, olive oil, salt and pepper.

Step 3

Cooking:
Preheat the frying pan with olive oil over high heat for 2 minutes. Arrange the scampi, belly side down (side with the lemon purée) in the hot pan, no more than 1 minute per side. Once cooked, divide them up and place them in the middle of each plate. Add the turnips and radishes on top of the scampi (reserve the sherry vinegar and olive oil), and place the rocket in a dome on top.

Step 4

Deglaze the pan with the sherry vinegar and olive oil and serve immediately.
