Peanut Satay Sauce

A delicately spiced peanut satay sauce, delicious as a dipping sauce or a marinade.
Ingredients
- 1/2 cup crunchy peanut butter
- 2 teaspoons sugar
- 2 cloves garlic
- 1 shallot
- 1 onion
- 1 can coconut milk
- cumin
- chilli flakes
- pepper flakes
- 1/2 teaspoon ginger powder
- Dried corriander
- 1 teaspoon Salt
- Pepper
- 1/2 cup boiling water
- 1 teaspoon concentrated lemon juice

Step 1
Crush the garlic, shallot 1/2 of the onion and blend in a liquidizer.
Step 2
Sprinkle in the chilli and pepper flakes and a touch of cumin and corriander. Add the salt, pepper and ginger powder and combine with the coconut milk
Step 3
Add to a pan with the peanut butter and boiling water and gently simmer until combined then stir in 1 teaspoon of concentrated lemon juice before transferring to a bottle for use later.
Soy sauce can be used instead of salt for a more authentic asian flavour and to add colour to the dish.
A couple of sprigs of mint add a cooling side to the dish and enhance the flavours.
