Combine all of the ingredients listed in a bowl and mix until lightly elestic, knead as required, once at this stage set the mixture aside in a warm place covered with a damp cloth to rise for 2 hours
Once the dough has risen knead the dough lightly before rolling into a crisp flat surface, raising the edge slightly to form a lip, or as an optional alternative spread grated cheese and herbs around the edge and gently roll a stuffed crust lip slicing light slits around the circle to enable rising and drizzle lightly with oil.
At this point you are ready to create your topping, begin with a tin of pealed plum tomaroes and liquidise the ingredients within, feel free to add some chilli to this in order to add a spicy alternative, spread this lightly accross the surface before grating the cheese of your choice lightly until the sauce is just covered evenly accross the base.
If you are adding additional ingredients be sure to slice them finely so they will cook as quickly and evenly as the base and add an extra layer of cheese to the surface to maintain the cheesy satisfaction desired of a pizza
Place in a preheated oven at 190* degrees until perfectly cooked, this should take 15-20 minutes but ovens vary and you should keep an eye on this so as not to under or over cook, the base should come out crispy and light with delicious melted cheese on the surface.
A selection of different tasting cheeses grated all over the surface makes for a truly special pizza, be sure to preheat the metal tray you plan to cook the pizza on to ensure your base comes out without a soggy bottom, and feel free to add herbs and spices to your taste to truly bring out the flavours of the dish.
