A dark sweet moist fruity loaf with sticky icing. Easy to make, and it keeps moist for a couple of days if kept in an airtight container

Ingredients

  • 6oz self raising flour
  • 1 tea spoon mixed spice
  • 2 tea spoons ground ginger
  • 2 oz brown or demerara sugar
  • 2 oz soft butter
  • 2 eggs
  • 2 tablespoons black treacle
  • 1 apple finely sliced
  • 5 fluid ounces of milk
  • 1 teaspoon of bicarbonate of soda
  • 6 dates stoned and finely chopped
  • ICING
  • 4 ounces of icing sugar
  • 1/2 ounce melted butter
  • 1 tablespoon of lemon juice
  • 1 tablespoon of milk

Preparation

Step 1

preheat oven to 180 degees c/350 f and grease a 2lb loaf tin
sift flour spice,ginger into a bowl and add sugar
cut butter and rub in between fingers tillmixed
beat in eggs and treacle to make a smooth batter then add two thirds of the sliced up apple
heat the milk until boiling,stir into mix, and the bicorbonate of soda and beat well.
pour evenly into greased tin drop the chopped dates on top and finish with the rest of the sliced apple
bake fo 40 - 60 minutes until a skewer comes out of the centre clean.

Step 2

Icing
mix all the icing ingredients together and cover to use when the cake has cooled.

if you dont like dates leave them out, and if you dont like lemon make plain icing instead but the lemon and apple work well together.
