Preparation
Step 1
Fry the sliced mushrooms for 5 minutes.
Step 2
Add the prawns.
Step 3
Peel and slice the tomatoes and add the prawns when they change colour, brown for 5 min.
Step 4
Add salt, pepper and parsley.
Step 5
Mince the onion and melt in a pan with oil.
Step 6
Add the rice and mix with the blanched onions.
Step 7
Pour white wine over the rice.
Step 8
When the wine is absorbed, add the stock gradually, stirring until absorbed.
Step 9
Put the risotto on a plate and place the mushroom mixture, prawns, onions and tomatoes on top.
Step 10
Grate the Parmesan cheese for presentation.
