Pyramid of cauliflower and a heart of cherry tomatoes with filet mignon of turkey and Parmesan

Preparation
Step 1
Cook the cauliflower for 10 minutes in a pressure cooker. Then crush with eggs, cream, then salt and pepper.

Put a knob of butter in a saucepan and sauté the chopped shallot. Add 1/2 a glass of water and two cherry tomatoes. Cook for 10 minutes, then add the tomato paste and Worcestershire sauce. Cook for 5 minutes. Salt and pepper.

Place a tablespoon of mashed cauliflower in the bottom of the pyramids and spread with a spoon to cover the edges. Place a tablespoon of tomato mixture on top and cover with the mashed cauliflower. Smooth the base of the pyramids with a knife.
Step 4
Cook for 25 minutes at 200 ° C in a bain marie.
Step 5
Coat the turkey in flour. Mix the egg with the milk and Parmesan.
Step 6
Heat a pan with a knob of butter, coat each piece of turkey in the parmesan and fry. At the beginning over high heat, then over low heat for 4-5 minutes per side.
Step 7
Filter the rest of stewed cherry tomatoes to make a sauce.
Step 8
Place 2 pyramids per person, 2 or 3 pieces of turkey and a dash of sauce on each plate.
