- 2 fresh peaches
- 4 slices of Parma Ham or other air-dried ham
- 150g Apetina crumbly white cheese (classic)
- Handful of chives
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- 1 teaspoon honey
- Ground black pepper and salt to taste
Pasta with Pesto, Roast Chicken and Cherry Tomatoes

Tear all of the basil leaves and mint leaves from their stalks and place them in a blender
- A large handful of fresh basil leaves (about 3 full stems or about 30 leaves)
- A large handful of fresh mint leaves (about 3 full stems or about 50 leaves)
- A large handful of fresh parsley leaves (the more the merrier)
- A small clump of chives (about 10 leaves)
- 2 tablespoons cashew nuts
- 1 tablespoon pine nut kernels
- 1 large slug of olive oil
- Ground black pepper
- 1 match-box sized piece of hard cheese (traditionally parmesan, but we used cheddar!)
- 10-15 cherry tomatoes
- 2 roasted chicken breasts (cold, with or without skin)
- Garofalo Dischi Volante pasta 260g (we allow 100g per adult and 60g for Lara)
BBQ Chicken Drumsticks and Spicy Rice

Preheat the oven to 180 degrees centigrade
- For the chicken:
- 10-12 chicken drumsticks
- 2 tablespoons Heinz tomato ketchup
- 2 tablespoon honey or maple syrup
- 1 tablespoon soy sauce (we use a dark soy sauce)
- 2 teaspoons english mustard
- 1 tablespoon malt vinegar
- 1 tablespoon sunflower oil
- 1 tablespoon sesame seeds
- 1 tablespoon plum jam (any sweet jam will do but strawberries and raspberries may taste a bit weird in a savoury dish!)
- For the rice:
- 1 tablespoon sunflower oil
- 2 small cups of rice
- 1/2 an onion (we used a red onion for colour)
- 2 peppers chopped (we used several different colours)
- 1 small can red kidney beans
- 1 teaspoon chilli powder
- 1/2 a can of chopped tomatoes
- 1 tablespoon Heinz tomato ketchup
- 3 cups of water

Blackberry Muffins

Preheat the oven to 200 degrees centigrade Measure all of the dry ingredients into a large bowl
- 75g well softened butter (we used Flora cuisine to give the muffins a really bouncy texture)
- 250g self-raising flour
- 1/2 teaspoon bicarbonate of soda
- 75g caster sugar
- 1 large egg (medium will do too)
- 200ml milk (whole or semi-skimmed)
- A big bowl of blackberries. On reflection, I probably should have weighed how many we had but it was about one full cereal bowl.
