This is a pasta dish cooked in a creamy sauce with Salmon and prawns
- 200g fillet of salmon (cut into thick slices)
- 16 grey tiger prawns
- 120g dried pasta shells or 400g fresh pasta shells
- 1 small onion (chopped)
- 50g mushrooms (sliced)
- 1 clove of garlic (chopped)
- 2 tablespoon diced red pepper
- 2 tablespoon diced green pepper
- 100 ml dry white wine
- 100 ml milk
- 75g grated matured Cheddar cheese
- 1 teaspoon cornflour
- 1 handful of chopped fresh herbs
- 2 tablespoon olive oil
- Salt and pepper
- A few shavings of Parmesan cheese and chopped chives for garnish
Family Favourite Lancashire Hotpot

This hotpot recipe is very easy and tasty
- 750g/1½lb lean beef cubes
- 2 tablespoon cooking oil
- 50g/2oz plain flour (with salt and pepper)
- 2 onions (sliced)
- 500g/1lb potatoes (peeled and sliced)
- 2 celery stalk (sliced)
- 1 carrot (cubed)
- 100g/4oz swede (cubed)
- 30ml dry sherry
- ½ teaspoon mustard
- 1pich of ground nutmeg
- 3 bay leaves
- ½ teaspoon rosemary (chopped)
- 1 teaspoon thyme (chopped)
- 350mls beef stock
- 15g/½oz butter + 1 clove chopped garlic
Malaysian Style Spicy Chicken

- 2 tablespoon groundnut oil
- 1/2 glass of Cognac

- 1 teaspoon lemon juice
- 1 tablespoon chopped chives
- A handful of Rocket leaves (garnish)
- Salt and pepper (seasoning)
- Balsamic vinegar reduction (decoration)
