Step 1
Preheat oven to 135*c
Pour the almonds and cashews into a blender and pulse a few times to break into smaller pieces.
In a bowl, microwave the coconut oil, honey and vanilla extract until melted.
Add the pumpkin and sunflower seeds, nuts and coconut flakes to the melted liquid and mix.
Spread the mixture onto a baking sheet lined with greaseproof paper and bake for 25 minutes or until lightly browned, stirring and moving it around once or twice.
Remove from the oven and sprinkle the dried fruit over the granola, pressing it down into it making it flat.
Leave to cool for about 25 minutes or until hardened, then break into bite size chunks.
Store in an airtight container to last a good week
