Raspberry Jam Drop Cakes

These lovely mini cake are made with butter and filled with raspberry jam in the centre. Delicious

Ingredients

  • 100g butter ( soften)
  • 100g caster sugar
  • 160g SR flour
  • 1/2 egg
  • 1/2 tsp Vanilla essence
  • 1/4 tsp salt
  • 30g Raspberry jam

Preparation

Step 1

Cream butter and sugar together in a food mixer till light and fluffy.
Add in beaten egg, salt, vanilla and sift flour. Mix well to form a soft dough.

Step 2

Divide the dough into 15 pieces. Roll each piece into a small ball.
Place the balls onto a well greased baking tray. Flatten each ball slightly. Make a hollow indentation in the centre of each. Place 1/2 a teaspoon of jam in the centre of each cake.

Step 3

Bake in the centre of a preheated oven Gas mark 4 / 160C for 20 minutes till the cakes are golden brown.

Step 4

Cool o a wire rack. Dust with icing sugar.

Do not over filled with jam or it will boiled over. You can always add some more jam on top.
