Two Cheese Mini Quiche

Ingredients

  • 100g chopped bacon (finely diced)
  • 1 tabsp. oil
  • 30g goat’s cheese
  • 30g matured cheddar cheese (grated)
  • A handful basil leaves (roughly chopped)
  • 4-5 spring onions (sliced)
  • 1 teaspoon cooking oil
  • 75ml milk
  • 1 tablespoon cream
  • 2 large free range egg (beaten)
  • pepper for seasoning
  • 200g short crust pastry

Preparation

Step 1

Heat the oil in a frying pan. Fry bacon till crispy Set a side. Beat the egg, milk and cream together in a large bowl. Add in the bacon and the crumbled goat’s cheese. Add a dash of pepper.

Step 2

Heat the oil in a frying pan. Soften the onions and wilt the basil. Leave to cool.

Step 3

Roll out the pastry, line four 10cm loose base fluted tartlet tins. Divide the herbs between the 4 pastry cases. Add in the egg and bacon mixture. Sprinkle with grated cheddar cheese.

Step 4

Bake in a middle of the oven 190c/375F/ Gas 5 for 20 minutes until the top is golden brown. Remove from the oven and leave to cool.
5. Serve warm with freshly dressed green leaves salad and pickled cucumber relish as a starter to a meal.

Make sure all the ingrediets are cool before putting in to pastry case
