Belgian Waffles topped with Syrup Coated Banana

Freshy made warm belgian waffles topped with banana's gently warmed in a sticky home made syrup sauce, delicious with a scoop of ice cream on the side.
Ingredients
- 7.5oz dried yeast
- 2 tablespoons sugar
- 1/4 tablespoon salt
- 1/2 teaspoon vanilla extract
- 1 egg
- 1 cup all purpose flour
- 1 cup milk
- 3 tablespoons buttery spread
- 3 tablespoons buttery spread

- 4 tablespoons sugar
- 1 banana

Preparation
Step 1
Whisk together the milk, egg yolk and butter, stir in the yeast sugar, salt and vanilla. Slowly whisk in the flour until combined
Step 2
Beat the egg whites until stiff peaks are formed and fold the two mixtures together, leave this to rest for 1 hour in a warm place.
Step 3
Pre heat the waffle iron and brush with butter before pouring the batter mixture into the mould and close until cooked.
Step 4
While cooking gently melt some butter in the pan on the lowest heat possible, once melted begin stirring in a little milk, continue stirring the mixture whilst adding sugar until you have a gentle brown sauce which sticks to the spoon without burning or being too thick, add more milk as required. Add sliced banana into this and gently coat before adding on top of your freshly cooked waffles
Step 5
Serve with a scoop of ice cream
Other soft fruits such as strawberries would make tasty alternatives.
