Buttermilk Pancake Layer Cake

Ingredients
- pancakes:
- - 150 g wheat flour
- - 4 tbsp potato flour
- - 2 tbsp honey
- - sprinkle of salt
- - 2 egg yolks
- - 300 ml buttermilk
- rest:
- - plum stew
- - fromage frais
- - caster sugar

Preparation
Step 1
sieve and mix both kinds of flour, salt, honey, and buttermilk. add yolks to the mixture.
Step 2
fry pancakes without any oil on the non-stick skillet.
Step 3
when the pancakes are chilled you may lay the plum stew and the fromage frais on it and sprinkle on it with caster sugar.
Step 4
it should look:
a) pancake
b) the plum stew
c) the fromage frais
d) caster sugar
e) another pancake
Step 5
repeat this action until the layer cake is done.
serve cooled down (min 1 hour)
