Butter beans and garlic

Ingredients

  • Olive oil
  • 1 onion
  • 3 cloves of garlic
  • 2 x 400g tin of butter beans
  • 200ml of vegetable stock
  • A good handful of flat leaf parsley
  • Zest and juice of 1 lemon

Preparation

Step 1

Finely chop the onion, then fry until soft and golden. Crush the garlic and stir until the smell really starts to come out of the pan.

Step 2

Add the beans, stirring to cover in the oil, before adding the stock. Then cook for about 15 minutes.

Step 3

Stir in the parsley, lemon juice and add some salt and black pepper whilst still warm.

Step 4

Serve at room temperature or hot.
