Step 1
Prepare the white sauce:
Melt the butter in a small saucepan. Add the flour and stir with a whisk to form a roux. Dilute with milk gradually. Salt and pepper. Cook for ten minutes until the mixture thickens. Add the grated cheese and leave to cool.
Step 2
Roll out the puff pastry and cut out 4 rectangles of about 2-3 mm thick.
Step 3
Spread the cooled white sauce on one half of the rectangle, leaving a small border. Wet the edge with a little water. Fold the rectangle over the filling and stick by pressing the edges with a fork.
Step 4
Baste with an egg yolk. Make criss-crooses with a knife on the top and bake 20 to 30 minutes in a preheated oven at 200 ° C.
