Preparation
Step 1
Break the chocolate into pieces and melt the butter in a bain-marie or a microwave on low heat.
Step 2
Add the caster sugar and while stirring with a wooden spoon, add 3 egg yolks one by one, then the flour.
Step 3
Beat the egg whites until stiff, add a spoonful to the batter and stir briskly. Add the remaining egg whites gently folding into the batter.
Step 4
Pour into a buttered cake tin and a sheet of greaseproof paper or silicone for easy removal.
Step 5
Bake in a moderate oven at 150 ° C for twenty minutes. The cake should remain soft in the centre.
