Preparation

Step 1

Beat energetically the 3 egg yolks with the icing sugar until the mixture is pale and frothy. Then add the mascarpone and mix until smooth. Beat 3 egg whites until stiff, adding a pinch of salt, then mix with the mascarpone cream. Prepare the speculoos biscuits by crushing them into small irregular pieces and place in bottom of the individual verrine glasses.

Step 2

Put the small cubes of previously cooked apples in a pan to melt. Spread a layer of mascarpone cream on top and sprinkle with the finely crushed speculoos.
Place in the fridge for at least 3 hours.
