Juicy pan-seared scallops and salty, crisp bacon – this recipe is the perfect surf and turf marriage
- 400 g Maris Piper potatoes, peeled
- sea salt
- freshly ground black pepper
- 60 g piece of thick smoked bacon
- 6 scallops, shelled and trimmed
- 2 knobs of unsalted butter
- 75 ml semi-skimmed milk
- olive oil
- a few sprigs of fresh sage
- ½ a lemon
Peruvian Ceviche

- 400 g sea bass, lemon sole or snapper, pinboned, skinned and filleted, sustainably sourced
- 1 red or yellow pepper, deseeded and finely chopped
- 2 spring onions, trimmed and finely sliced
- juice of 3 lemons
- 1 teaspoon sea salt
- 1-2 fresh red chillies, deseeded and finely chopped
- 8 sprigs of fresh mint, leaves picked
- 8 sprigs of fresh coriander, leaves picked
- 1 punnet of mustard cress
- a few fennel tops, leaves picked (optional)
- extra virgin olive oil
- freshly ground black pepper
Asian-steamed sea bass

Score the sea bass on both sides at 2cm intervals, cutting roughly 1cm deep, then place into the steamer tray
- 1 x 1.5 kg whole sea bass, scaled, gutted and gills removed (ask your fishmonger to do this for you)
- sea salt
- 5 spring onions, trimmed and finely sliced
- 1 fresh red chilli, finely sliced
- a thumb-sized piece of fresh ginger, peeled and finely chopped
- a large bunch of fresh coriander, leaves roughly chopped, stalks finely sliced
- 1 lime
- low-salt soy sauce
- sesame oil
Jordan and Zoes Wedding Pie

A rich shortcrust pastry pie recipe, packed with flavour and full of all the things us Brits do best
- 2 tablespoons olive oil
- 1 knob butter
- 3 sprigs fresh rosemary, leaves picked and chopped
- 3 sprigs fresh thyme, leaves picked
- 3 fresh bay leaves
- 3 medium red onions, peeled
- 1 kg quality shin of beef, ask the butcher to cut into 2.5cm dice and give you the bone
- sea salt
- ground pepper
- 2 tablespoons tomato purée
- 400 ml good local smooth stout
- 2 heaped tablespoons plain flour
- 1.5 litres organic beef or chicken stock
- 140 g pearl barley
- 3 teaspoons English mustard
- 2-3 tablespoons Worcestershire sauce, to taste
- 100 g Cheddar cheese
- For the pastry
- 300 g plain flour
- 100 g Atora shredded suet
- 100 g butter
- sea salt
- 1 large free-range egg, beaten
Grilled mushroom risotto

Grill the mushrooms and scattered them on top of the risotto for a gorgeous, nutty flavour
- 1.5 litres organic chicken or vegetable stock, hot
- 1 handful dried porcini mushrooms
- olive oil
- 1 small onion, peeled and finely chopped
- 2 sticks celery, trimmed and finely chopped
- 400 g risotto rice
- 75 ml vermouth or white wine
- sea salt
- freshly ground black pepper
- 4 large handfuls wild mushrooms (try shiitake, girolle, chestnut or oyster), cleaned and sliced
- a few sprigs fresh chervil, tarragon or parsley, leaves picked and chopped
- juice of 1 lemon
- 1 teaspoon butter
- 1 small handful Parmesan cheese, freshly grated, plus extra for serving
- extra virgin olive oil.

- For the cheesecake
- 150 g unsalted butter, melted, plus extra for greasing
- 300 g dark chocolate digestives
- 100 g golden caster sugar
- 3 tablespoons cornflour
- 900 g full-fat cream cheese
- 2 large eggs, preferably free-range or organic
- 100 ml double cream
- 1 orange
- 50 g good-quality dark chocolate (70% cocoa solids), broken into small pieces
- For the cherries
- 300 g dried sour cherries
- 3 heaped tablespoons caster sugar
- 1 orange
- 1 stick cinnamon
- 1 vanilla pod, halved lengthways
- 1 splash rum, brandy or grappa
- For the chocolate sauce
- 100 g good-quality dark chocolate (70% cocoa solids), broken into pieces
- 200 ml single cream

- 100 g butter, softened
- 100 g caster sugar
- 1 free-range egg

Quick individual strawberry & vanilla trifles
