Pressed Picnic Sarnies ( Sandwiches)

These are the easiest and the tastiest of picnic sandwiches
- 1 Ciabatta loaf, cut in half length wise
- (If you can get them the sun dried tomato or olive Ciabatta makes for a really fun sandwich)
- 3 tablespoons grainy mustard mayonnaise
- Garlic and Herb Boursin cheese
- 1/4 pound thin sliced roast turkey
- 1/4 pound thin sliced ham
- 1/4 pound thin sliced German Salami
- 4 slices gouda cheese
- 4 slices of edam cheese
- 4 slices emmental cheese
- Roasted bell peppers
- sliced sweet gerkins
- sweet pickled jalapeno peppers (or any other hot pickled pepper you like)
- chopped marinated olives
- thinly sliced red onions
- thinly sliced ripe tomatoes
- Fresh basil leaves
- Fresh rocket leaves
Easter Bark

Sweetly scrummy. Easy and quick to make too! I like to add broken pretzels to mine
- 12 ounces (weight) of white chocolate chips or candy melts (2 cups)
- 2 tsp white vegetable shortening
- 2 (100g) bags of small candy covered chocolate easter eggs such as The Cadbury's ones (about 1 heaped cupful)
- A good handful of small pretzel hoops, broken (optional)
Herb Roasted Turkey with Gravy

This really is a moist and flavourful way to cook a turkey
- 14 pound turkey (I like to use a free range bird myself)
- 1 TBS salt
- 1 tsp pepper
- 18 sprigs of fresh thyme - divided
- 4 medium onions - sliced
- 4 celery ribs, sliced
- 2 medium carrots - sliced
- 3 bay leaves
- 1 TBS peppercorns
- 1/2 cup butter - melted
- 1 tsp minced fresh sage
- 1 tsp minced fresh thyme
- 1 tsp finely chopped chives
Bacon, Cheese, Tomato & Leek Pudding

Kind of like a savoury bread and butter pudding made with Bacon, Cheese, Tomato and Leek sandwiches
- A stale french loaf
- (You will need at least 14 slices)
- 2 ounces (1/4 cup) butter - softened
- 1 large tomato, thinly sliced - and cut into half moons
- 6 slices steaky bacon - cooked crisp and crumbled
- 1 medium leek, washed - trimmed and very thinly sliced
- 1/2 pound of strong cheddar cheese - grated (about 2 cups)
- 3 large free range eggs
- 1 TBS Dijon mustard (can use grainy if you have it)
- 1 pint of whole milk (2 cups)
- Salt and pepper to taste
Roasted Root Veggie Pizza

A deliciously different pizza with a thick wholewheat crust, topped by sweetly caramelized roasted root veggies and...
- For the crust:
- 280g of plain flour
- 70g of whole wheat flour
- 1 tsp salt
- 1 TBS rapid rise or bread machine yeast
- 225ml of hot water (1 cup)
- 2 TBS olive oil
- For the toppings:
- 1 small butternut squash
- 1 medium parsnip
- 1 medium carrot
- 2 small red onions
- fine sea salt and freshly ground black pepper
- olive oil
- 120g of grated emmenthal cheese (1 cup)
- 120g grated strong cheddar cheese (1 cup)
- 65g of grated mozzarella cheese (1/2 cup)
- 45g of finely grated Parmesan cheese (1/4 cup)
- 1 1/2 TBS fresh thyme leaves
Italian Wedding Soup Supper Dish

It's got all the flavours of the traditional Italian Wedding Soup, but it's not soup
- 8 ounces orecchiette pasta (2 cups)
- (can use an equal amount of any small pasta shells)
- 1/2 pound boneless skinless chicken breast meat - cut into 3/4 inch cubes
- 2 TBS olive oil
- 1 medium onion - peeled and finely chopped
- 1 medium carrot - peeled and coarsely chopped
- 1 stalk of celery - washed, trimmed and chopped
- 1 small clove of garlic - peeled and minced
- a package of frozen cooked Italian meatballs - thawed (12 ounces)
- 1 tin of cream of chicken soup - undiluted
- 1 tin of milk
- 1 chicken stock pot
- 1/2 tsp dried thyme (or 2 tsp chopped fresh)
- about 6 cubes of frozen whole leaf spinach (thawed) squeezed dry and chopped
- Salt and black pepper to taste
- 135g of grated Parmesan cheese (3/4 cup)
Easy Goji Berry Granola

I have always made my own granola
- 320g of rolled oats - not quick cooking (4 cups)
- 115g of butter (1/2 cup)
- 1 tsp vanilla extract
- 1/2 tsp almond extract
- 4 TBS runny honey
- 100g of soft light brown sugar (1/2 cup packed)
- 85g of flaked almonds (1/2 cup)
- 60g of chopped pecans (1/2 cup)
- 55g of whole cashews (1/2 cup)
- 75g of shredded coconut (1 cup)
- 150g of dried fruit (about 1 cup - I used half Goji berries and the rest was a mix of dried blueberries, sour cherries and sultanas)
Chopped Green Salad with a Grape Balsamic Dressing

- 2 baby gem lettuces, rinsed - dried and coarsely chopped
- A handful of washed and dried flat leaf parsley leaves
- 1 spring onion, coarsely chopped
- 1 stalk of celery, coarsely chopped -along with some leaves if possible
- A 3-inch piece of English Cucumber - washed, un-peeled
- A handful of frozen petit pois - thawed and drained
- 1 TBS chopped chives
- about 8 oil cured pitted and sliced green olives
- For the dressing:
- 60ml of good quality olive oil (1/4 cup)
- 2 TBS Grape Balsamic Vinegar
- Pinch sugar
- Sea salt and freshly ground black pepper
- 1/4 tsp dried dill tops
- 1 TBS chopped fresh chives
Panzanella

This is what you make when the summer tomatoes are ripe for the picking and the outside temps are soaring
- For the bread:
- 1/2 day old French boule - sliced into 1/2 inch slices and then cut into 1/2 inch cubes
- Fine sea salt
- cracked black pepper
- 2 TBS of good quality olive oil
- For the Salad:
- 6 medium sized ripe tomatoes - cut into 1 inch cubes
- 1/2 each red and yellow peppers - cut into 1/2 inch cubes
- 1/2 an English Cucumber - peeled and cut into 1/2 inch cubes
- 1 small red onion (cut in half lengthwise, reserve 1/2 for another use, then peel the other half. Cut into thin half moons)
- 1 handful each of dry cured pitted black and green olives - quartered
- 1 heaped TBS nonpareil capers - rinsed and drained
- About 10 large basil leaves, cut chiffonade (Stack them together, roll them up tightly, and slice across thinly)
- A small handful of flat leaf parsley coarsely chopped
- For the dressing:
- 1 small clove of garlic, peeled and finely minced
- 1/2 small shallot, peeled and finely minced
- 1/2 tsp Dijon mustard
- 3 TBS sherry vinegar
- 125ml good quality olive oil (1/2 cup)
- Fine sea salt and freshly ground black pepper to taste
Pork Chops with a Gooseberry, Honey and Walnut Sauce

What to do when you have a handful of tart gooseberries and a few pork chops
- 2 thick pork chops
- A large handful or two of ripe gooseberries - red or green (topped and tailed)
- Fine sea salt and freshly ground black pepper
- A few springs of fresh Marjoram (or dried if that's all you have)
- Two dessert-spoons of Acacia Honey
- A small handful of toasted English Walnuts
- A knob of butter
